Skirt Steak Tacos
on the Big Green Egg
Ingredients
- 2 lb Skirt Steak
- 1 Large Onion (sliced aprox. 1/4" thick)
- Fajita w/ Cilantro Rub by John Henry’s
- 1 each Green, Red, & Yellow Bell Pepper (sliced aprox. 1/4" thick)
- 1 package Soft Taco Shells
- Shredded Cheese
- Salsa & Sour Cream
- 1 Tbsp Oil
Directions:
- Heat Big Green Egg® or grill to 500º F.
- Liberally apply rub onto the skirt steak and then let it rest for 15 minutes.
- Take the 1/2 moon cast iron griddle and place it on Egg to heat it up.
- Take the steak and place on the cooking grid and let cook for 3-4 minutes per side.
- Pull the steak off and set aside for about 5 minutes.
- Put the oil on the heated griddle and add the vegetables.
- Slice the skirt steak into 1/2" thick strips and add to vegetables on the griddle.
- Cook until vegetables are soft.
- Pull the mixture off the griddle and set aside to rest.
- While the food is resting, warm the tortillas on the cooking grid and wrap in foil.
- Build your taco top with desired toppings and enjoy!
