Skirt Steak Tacos
on the Big Green Egg

Ingredients

  • 2 lb Skirt Steak


  • 1 Large Onion (sliced aprox. 1/4" thick)


  • Fajita w/ Cilantro Rub by John Henry’s


  • 1 each Green, Red, & Yellow Bell Pepper (sliced aprox. 1/4" thick)


  • 1 package Soft Taco Shells


  • Shredded Cheese


  • Salsa & Sour Cream


  • 1 Tbsp Oil


Directions:

  1. Heat Big Green Egg® or grill to 500º F.


  2. Liberally apply rub onto the skirt steak and then let it rest for 15 minutes.


  3. Take the 1/2 moon cast iron griddle and place it on Egg to heat it up.


  4. Take the steak and place on the cooking grid and let cook for 3-4 minutes per side.


  5. Pull the steak off and set aside for about 5 minutes.


  6. Put the oil on the heated griddle and add the vegetables.


  7. Slice the skirt steak into 1/2" thick strips and add to vegetables on the griddle.


  8. Cook until vegetables are soft.


  9. Pull the mixture off the griddle and set aside to rest.


  10. While the food is resting, warm the tortillas on the cooking grid and wrap in foil.


  11. Build your taco top with desired toppings and enjoy!
