Foil Wrapped Apple Brown Betty
on the Big Green Egg

Ingredients

  • 4 Apples, peeled and thinly sliced


  • 1/2 cup crushed cookie crumbs, preferably graham crackers


  • 1/4 cup brown sugar


  • 1/4 cup butter, melted


  • 1 tsp ground cinnamon


Directions:

  1. Prepare a low fire in the EGG, Stabilizing at 250 degrees.


  2. If you use a hot fire the apples will scorch and their flavor will be bitter.


  3. Combine the apples, cookie crumbs, brown sugar, butter, and cinnamon in a bowl and mix well. Divide the mixture between 2 large pieces of heavy- duty aluminum foil and seal the packets so that no liquid or steam will escape.


  4. Grill the packets, turning once, until the apples are soft, about 20 minutes.


  5. Open the packets very carefully and serve warm.


NOTE: To make the aluminum foil packets you will need to cut the foil large enough to hold 1 or 2 servings. Place the apple brown betty in the center. Bring the long sides of the foil together, covering the mixture, and fold the edges over about 3 times to seal them. Then fold the short ends over about 3 times. This should form a tightly sealed packet.
